Wow, hold the mustard, it's OK |

As a chef and a manager at a small food boutique I find your request absolutley acceptable. The ONLY reason I would go ahead and put any condiment on a sandwich is if I were not happy with or not confident in the main ingredients. I see a condiment sometimes as a compliment to a hot dog or burger, and sure I am a fan of mustards, but I like to taste what is in the sandwich and not was is covering it up. I think that all condiments should be offered on the side and not automatically on it; this would save on waste and certainly (at least hopefully) increase overall quality.
